Dulce de Leche Cupcakes

Today's sweet treat is a dulce de leche cupcake.


The cupcake is a chocolate cupcake. Instead of using water I used freshly brewed coffee, because coffee and chocolate always go together!

The filling for the cupcakes is a dulce de leche caramel. Dulce de leche is sweetened milk. To make that into caramel is slowly cooked for approximately 6 hours until turns golden brown and thickens. Once the caramel cooled I piped it into the cupcakes.

The cupcakes were topped with a thick fudgy frosting. It was more like fudge than frosting, but it it delicious.

To top off each cupcake I sprinkled a pinch of sea salt on top.

Birthday cake and Lemon Meringue Pie

Last week was my friend Jaxon's 9th birthday. My mom asked me to make a birthday cake for him since she was going to visit him last week. He loves legos and he told me his favorite color was blue, so I made him a blue lego cake.

The cake was a two layer chocolate cake with chocolate fudge icing in the middle. The outside was frosted with vanilla buttercream.

 He loved his cake!!

It was also recently my Aunt's birthday recently. Jaxon lives next door to my aunt so they celebrated together with my mom. My aunts favorite dessert is a lemon meringue pie, so I sent one for her birthday too.

The lemon meringue pie was a gluten free pie and everyone loved it!

Chocolate Eclairs

Today as a St. Patrick's Day treat (even though they aren't Irish) I made chocolate eclairs. An eclair is a long doughnut filled with custard and frosted with chocolate icing.

Eclairs are fun to make because it is a unique type of dough. The dough is called pate a choux. There are no leavening agents in this dough, it rises from the steam that is released during baking. Another reason I love these is because they are baked, not fried.

Once these lovely treats have been baked you fill them with a smooth custard and top them with a rich chocolate icing. They are delicious!

Sunflowers

This past weekend my husband and I hosted a going away party for a coworker of his. My husband is a Marine and his coworker recently left the Marine Corps so we were celebrating his service. There were 7 families which meant LOTS of kids. It was nice to have all of the kids running around playing and being able to visit with friends.

It was a pot luck dinner so of course I made dessert. I made chocolate surprise cupcakes. They were chocolate cupcakes with a caramel candy in the middle and I topped them with Oreo sunflowers.

Paczki's

Last week Tuesday was Fat Tuesday/Mardi Gras. When I was growing up we always had paczki's on Fat Tuesday, so I decided to make them this year. For those who don't know, a Pazcki (pronounced poonch-key) is a Polish doughnut. Traditionally Paczki's are filled with plum jam or strawberry jam. I decided to take a more modern route. I filled some with custard, some with lemon curd and some with strawberry jam.

Welcome

Welcome to my page! After some encouragement from my family and friends I decided to make a page for my work. I have sold my cakes in the past and I'm looking to start doing so again.

This week I am going to work with yeast dough. Today I am making a basic yeast dough for pizza. Tomorrow I am going to make Paczki's in celebration of Mardi Gras/Fat Tuesday. Instead of a traditional paczki filled with prunes, I am going to fill mine with lemon curd, custard, strawberry and possibly apple. I will add pictures when they are finished.
